When You Need an Easy Keto Dressing, This Tex Mex Dressing is Perfect!
Anyone who knows me well knows that I have a weird obsession with salads.
I can't quite pinpoint when it started, but it was definitely not in my teens or even my 20's.
Truth be told, I didn't have much of a relationship with vegetables at all in my 20's.
Part of it was being on my own and rebelling against all those vegetables that were forced on me as a child.
At some point in my early 30's, my attitude shifted.
I started craving salads. Everyday.
Weekend mornings were spent at farmer's markets or Whole Foods. Not because they had to be, but because that was where I wanted to be.
(It is a family joke to this day how much I enjoy shopping for vegetables.)
When this first started, I went with the only salad dressing I knew: Ranch Dressing.
Over time, I realized that homemade dressings are best in terms of both taste and quality of ingredients.

YIKES! (There are a few brands I will use but not many!)
I am a sucker for vinaigrettes, but sometimes I'm not in the mood to pull out the blender, or mince garlic.
Even when I'm feeling lazy, I am not willing to sacrifice on taste.
This Tex Mex Dressing is crazy-easy to make but still delivers on flavor.
My favorite way to enjoy it is on a taco salad, but really - anything goes.

I don't have Southwestern seasoning. What can I use instead?
You have several options. I like to make my own, so that I know the blend doesn't have any fillers in it. This is a good recipe. (Having spice blends on hand is a great way to save time. Just don't forget to label it!) If you are short on time, just use ¼ teaspoon each of smoked paprika, cumin, chili powder and coriander.
How long will this last in the refrigerator?
This will last for up to a week in the refrigerator. If any separation occurs, simply whisk again. (Or if you store it in a mason jar like I do give it a good shake.)
